Rice pilaf Indian Style.

This Indian style rice is so delicious and so easy to make. If you like to make it as a main dish, add vegetables to the rice. Make a vegetarian dish by using vegetable stock instead of chicken. It looks good on the plate hat is perfect to serve to guests.
  • 1 1/2 cups basmati rice
  • 2 tablespoons oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, finely grated
  • 1 teaspoon ground Tumeric
  • 1 teaspoon cumin seeds
  • 4 cardamon pods
  • 1 stick cinnamon
  • 2 1/2 cups chicken stock
  • salt and pepper
  • 2 tablespoons golden raisins
  • salt and pepper to taste
  • Toasted almonds
  • Fresh cilantro to garnish
  1. Rinse rice under cold water until it runs clear.
  2. Heat oil in medium saucepan.
  3. Add onions, garlic ginger and cumin seeds.
  4. Cook for 5 minutes.
  5. Add rice, cardamon, cinnamon, salt and pepper and chicken stock.
  6. Bring o boil.
  7. Reduce heat to low and cover.
  8. Cook for 12 minutes.
  9. Remove from heat and stir in the raisins.
  10. Cover the pan and set aside for few minutes.
  11. Serve in a large platter.
  12. Garnish with fresh chopped cilantro.
