- 1 pound spinach leaves
- 2 cups sliced mushrooms
- 1 cup diced pineapple
- Pineapple Dressing:
- Mix 3/4 cup pineapple juice, 2 tablespoons champagne vinegar, 1/4 cup diced pineapple and 1,2 teaspoon kosher salt in a blender until smooth.
- In a large bowl, toss the spinach, mushrooms and pineapple. Bring the dressing over medium heat to simmer. Pour over the salad and mix.
- Garnish with chopped macadamia nuts or bits of bacon.
