Recipe: Pineapple bread pudding: sweet, tart and delicious.

Ingredients

  • 1 (14oz.) can sweetened condensed milk
  • 1¾ cups warm water
  • 1 (8oz.) can crushed pineapple in heavy syrup
  • ½ cup raisins
  • 4 cups packed crumbs of Hawaiian or French bread
  • 3 large eggs
  • 2 tablespoons melted butter
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt

Instructions

  1. Heat oven to 350 degrees F. In a large bowl, stir sweetened milk, water, pineapple and raisins. Add the bread crumbs and press down to absorb juices. Beat eggs, butter vanilla extract and salt until well blended. Mix with bread mixture. Pour into 10 ½ X 6 ½ -inch baking dish. Place it in a shallow pan of hot water and bake for 45 minutes to 1 hour, or until knife inserted near center comes out clean. Serve warm or cold. Refrigerate leftovers.
